Mango with Raspberry Coulis

This summer dessert is a great end to a delicious planked meal. 

  • 2-3 ripe mangoes peeled and sliced with pits removed
  • Juice of 1/2 lime
  • 3 tablespoon brown sugar
  • 1 cup fresh raspberries
  • Vanilla ice cream or whipped cream (optional)


  1. In a small bowl, mix raspberries, lime juice and sugar until pureed.
  2. Marinade mangoes in mixture, then arrange on plank. 
  3. Place plank on grill with medium heat for approximately 8 minutes until mangoes are warm and tender but not overdone.
  4. Place mangoes onto plates and drizzle more raspberry mixture on top. 
  5. Serve with whipped cream or ice cream if you please. 

Serves 3 (or 6 larger servings)
