Pecan, Cranberry & Apricot Stuffed Apples

This recipe works great with apples or pears. All recipes require use of one pre-soaked grilling plank, prepared according to instructions.

  • 4 Rome or other baking apples, halved
  • ½ cup of pecans, finely chopped
  • ¼ cup of mixed, dried and chopped cranberries and apricots
  • ¼ teaspoon cinnamon
  • ¼ teaspoon of nutmeg
  • 1 tablespoon of melted butter
  • ¼ cup of brown sugar
  • 2 tablespoons honey
  • Four cinnamon sticks for garnish
  • Halve and remove cores from apples.

  1. Cut a small slice from the bottom of each half so it can lie flat on the plank.
  2. Combine ingredients and spoon stuffing into each apple half.
  3. Garnish with cinnamon sticks.
  4. Place apples on soaked plank.
  5. Grill for about 10 minutes on low heat until apples are tender, but be careful not to overcook.
  6. Wonderful served with ice cream.
  7. Serves 4-8.

The recipe says to halve the apples, but the picture shows them whole. Which method is correct?
