Planked Pineapple Shortcake

All recipes require use of one pre-soaked grilling plank, prepared according to instructions. 

  • One package of shortcake (either rounds or sliced loaf)
  • 1 large fresh pineapple peeled, cored and cut into 1 inch slices
  • 1 cup of light brown sugar
  • ½ cup unsalted butter
  • 2 tablespoons of lemon juice
  • ½ cup dark rum
  • 2 tablespoons of orange juice
  • 1 teaspoon cinnamon
  • 1 can of whipped cream or 1 ½ cups of home made whipped cream

Directions:

  1. Soak planks according to instructions
  2. To make the sauce, in a large saucepan combine the brown sugar, butter, lemon juice, orange juice, rum and spices and bring to a boil over medium-high heat.
  3. Reduce heat to medium-low and simmer for 8 minutes or until slightly thickened.
  4. Allow sauce to cool slightly.
  5. Place pineapple on plank and baste liberally with the sauce. 
  6. Close lid and grill for 3 minutes.
  7. Turn pineapple slices, baste again and close lid to cook another 2 to 3 minutes (until pineapple is nicely caramelized and golden.
  8. Set remaining sauce aside.
  9. Place hot pineapple over shortcake and top with whipped cream. 
  10. Use remaining sauce to drizzle over the top and decorate the plate.
