Smokey Bruchetta a la BBQ

For Toast:

  • 8 slices Italian or sourdough bread cut to 1/2 inch thick slices
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, pressed

For Topping:

  • 1 pound (about 3 medium) tomatoes chopped into small cubes
  • 1/3 cup chopped oil packed sun dried tomatoes
  • 1 tablespoon chopped fresh basil
  • 1 clove garlic, pressed
  • Kosher salt and fresh ground pepper to taste
  • 1 tablespoon extra virgin olive oil


  1. Prep plank according to guidelines and heat grill to medium high.
  2. For toast, mix olive oil with fresh garlic and a dash of salt and pepper.
  3. Brush bread slices on both sides with olive oil mixture and and  place on hot plank. 
  4. Grill until lightly golden brown, turning once for a total of 5-7 minutes. Remove from grill.
  5. Mix all topping ingredients together in a medium bowl.
  6. Spoon topping onto toasted slices and return to grilling plank.
  7. Close lid and grill f or another 2-3 minutes or until hot. .
  8. Makes 8 as appetizers.
